Origin Story

This delicious blend is the paragon of a perfect cosmic marriage. Cassiopeia's Guatemalan Caturra and Catuai beans bring full body, nut-infused, caramel notes together. Eclipse's Ethiopian Yirgacheffe beans offer a balance of citrus and berry flavors. Together, they create an intoxicatingly complex taste experience. Each bean type is roasted separately to maximize quality, then blended to achieve the ultimate in satisfying flavor.

This star-aligned coupling merges washed Arabica coffee from its 900-year-old African birthplace with the wet-milled coffee of ELLA - Women Producers of Guatemala. There the flora preserves biodiversity and reduces the need for chemicals. Three female ownersand growers are responsible
for 125 hectares in the central highlands.

Both coffees are cultivated within a range of 1400 2100m altitude. Kochere's prized Ethiopian beans are freshly jasmine scented, tastefully tart and mildbodied, while Ella's Guatemalan beans are sweet, fruity andbutter cocoa flavored. It is a truly divine combination.

Unforgettable Flavor Above All

We can taste, bitter sweet, sour, salty, or umami, but those tastes with smells, appearance, and preconceived ideas is what flavor is. It's everything in combination.

I have studied coffee for a long time. Bean origin, how the bean is farmed, harvested, washed and roasted all contribute to how good, or average coffee is. 1a rated beans have no defects according to the SCA, but ultimately great flavor, great coffee requires most of these to be present. Cassiopeia's origin bean blend of Ethiopian and Guatemalan is exactly as it is presented on its bag. Caramel, dried fruit, citrus, light medium roast. It took me a few days to find the ideal amount of beans to grind to make me say Ah Ha, but we are all a little different with our flavor strengths. Two days ago I made a perfect pot. I first tasted cirrus followed by subtle dried fruit, and WHAM I got a deep caramel bomb on the back of my palette. Cassiopeia is one of the best coffee's I have ever had. Celestial blend is next up. Cassiopeia coffee had a mild flavor at first, but when I brewed it even stronger, I could taste delicious flavors of citrus and dark chocolate.
