This stellar roast is a radiant example of cosmic balance. Nova’s Nicaraguan beans bring caramel sweetness, citrus brightness, and smooth cacao into perfect alignment. Grown in the volcanic highlands of Matagalpa and Jinotega, each bean is roasted separately to draw out its fullest flavor, then blended into a medium roast that’s both vibrant and grounded.

Nova merges washed and honey-processed Arabica from two legendary regions: the misty slopes of Jinotega and the sun-dappled forests of Matagalpa. Shade-grown beneath native trees, these beans thrive without chemicals, preserving soil health and biodiversity. Women-led cooperatives oversee much of the harvest, cultivating resilience alongside flavor.

At elevations of 1300–2000m, Jinotega’s beans bring bright citrus and a hint of florals, while Matagalpa contributes creamy caramel and rich cacao undertones. The result is a cup that’s sweet, silky, and satisfyingly complex. A constellation of flavor in every sip.
